Many people buy a decent steak knife set for life or at least 20-30 years. We got a nice Henkel set 15+ years ago as a gift, they are perfect to this day.

They last forever if taken care or and cut the steak like butter. Instead or wrestling the steak with a Cuisinart knife that you have to replace every 2 years.

Always serrated on sale. Steak knives should not be serrated because the serrations tear the meat.

Actually, the way food is cut can have an impact on flavor. Think sashimi. One knife will rip through the fibers of the meat, a sharp knife will slice them.

Pros and cons to both. Most dinner plates are ceramic/glass and will dull your straight blades with every slice. Unless you want to add sharpening your steak knives to your maintenance plan, semi-serrated (serrations on the edge in contact with the plate) knives like these are a nice compromise.

I currently use a serrated butter knife when I eat steaks at home. I won't pay money for serrated "steak" knives. SV steaks and reverse sear steaks cooked properly are easily cut with a butter knife.
