Xanthan gum is is a food additive used primarily as a thickener and stabilizer." Let's not get bent over the definitions... The fact is these were added to extend shelf life and are not good for you

Yes, I read the label. It has guar gum, xanthan gum and ascorbic acid. In comparison, Louisiana hot sauce only has 3 ingredients (peppers, vinegar, salt)
Guar and xanthan gum are thickeners/stabilizers used to keep things emulsified or suspended so that the solids don't separate from the liquids. Even if guar has preservative properties, it's not used as a preservative primarily. All three extra ingredients are completely harmless, unless you have a specific allergy. A lot of low cal salad dressings use those gums as thickeners too. Not a big deal really. Anyone curious should look them up.

By all means, buy a whole case and enjoy. I rather buy a product without those ingredients. A good hot sauce should only have 3 ingredients in my opinion and there are many available for purchase
