Important to note that it's app only. There are no controls on the device other than a power button.
You do not need to pay subscription to use it unless you want wifi capability. It is free to use via the app/Bluetooth.
Overall it's pretty good but during a cook the app can struggle to refresh if you leave and come back to it so what I do is close out the app entirely and reopen and it has consistently connected after that. Not too bad of an issue but worth noting
these are great, easiest example is for meat- you're not boiling them, you're holding them at specific temps so that the proteins behave certain ways. e.g. 144°F chicken breast is more or less rare and safe to eat because it's been pasteurized, but the meat won't get stringy or tough because that's a side affect of being exposed to high heat.
great stuff- lots of kenji articles on serious eats about it. buying a couple of these to hand out as gifts, lol- annoying to have to use app to set it, but it's 20$ a pop which is less than aldi's cheapo SVs when they have them randomly.

I've been using the 1.0 model this whole time. I have two of them. I also have the nano but I never use it. I prefer the old gen 1 model because you can take it apart to clean any hard water stains or buildup, and the clamp fits more pots (smaller and shallower pots).
Lately i've been using it a lot to mass pasteurize eggs for my wife that loves runny yolky eggs but can't have raw foods. 140F for 1 hour pasteurizes eggs and I precede that by a 5min30sec boil to firm up the whites. I store in the fridge and reheat by boiling for 3 to 3.5 minutes in the morning..
Otherwise I usually use when I have dinner guests so that I can focus on conversation and prepping my sides while my protein is set it and forget it. And some things are just impossible to achieve sous vide textures in oven/stove - such as salmon. Also works well for thanksgiving with tons of people - doesn't need stove or oven space, and scales up very well.

This isn't something that comes up often, and when it does, I can just prepare them sequentially. So it's not a huge problem, but for $20, why not?
My only holdup is this not having physical controls like the original model, meaning once the app is no longer supported, it'll become a paperweight. But, again - 20 bucks, it's not a huge risk.
850w is the relevant number, and that's a decent heater. Could start with hot water if pushing the limit, but I don't think that would be an issue with a home sized cooking vessel and this device.
