Bought this when it was $30 from Walmart. Actually works very well.

Important to note that it's app only. There are no controls on the device other than a power button.

You do not need to pay subscription to use it unless you want wifi capability. It is free to use via the app/Bluetooth.

Overall it's pretty good but during a cook the app can struggle to refresh if you leave and come back to it so what I do is close out the app entirely and reopen and it has consistently connected after that. Not too bad of an issue but worth noting

these are great, easiest example is for meat- you're not boiling them, you're holding them at specific temps so that the proteins behave certain ways. e.g. 144°F chicken breast is more or less rare and safe to eat because it's been pasteurized, but the meat won't get stringy or tough because that's a side affect of being exposed to high heat.

great stuff- lots of kenji articles on serious eats about it. buying a couple of these to hand out as gifts, lol- annoying to have to use app to set it, but it's 20$ a pop which is less than aldi's cheapo SVs when they have them randomly.

I bought this recently, and just to clarify: a subscription is not required to use the sous vide. The app does promote a subscription, but one can navigate past it and use every function of the device without paying anything. It's a fully usable, no-cost experience as long as the app remains available.

From what I see the subscription is $10/year or $2/mo. I have an old sous vide (different brand) with an app and controls on the device. I haven't opened the app in years. If I were to replace it I'd get a stick with controls on it.

I cooked a leg of lamb and it was perfectly medium the entire thing. Perfect. I did a chuck roast for 24 hours and it came out like a brisket.

is this model freestanding (without a clamp??) ;

I've been using the 1.0 model this whole time. I have two of them. I also have the nano but I never use it. I prefer the old gen 1 model because you can take it apart to clean any hard water stains or buildup, and the clamp fits more pots (smaller and shallower pots).

Lately i've been using it a lot to mass pasteurize eggs for my wife that loves runny yolky eggs but can't have raw foods. 140F for 1 hour pasteurizes eggs and I precede that by a 5min30sec boil to firm up the whites. I store in the fridge and reheat by boiling for 3 to 3.5 minutes in the morning..

Otherwise I usually use when I have dinner guests so that I can focus on conversation and prepping my sides while my protein is set it and forget it. And some things are just impossible to achieve sous vide textures in oven/stove - such as salmon. Also works well for thanksgiving with tons of people - doesn't need stove or oven space, and scales up very well.

There is no need for script it's fully functional for temp and time in the app. I bought an extra to help hear my plastic hot tub.

I learned something after buying mine: even though it's called a "mini" sous vide, it still requires a pretty tall vessel. The clamp needs about a 6-inch straight wall to attach properly, and it won't fit on smaller or curved pots. My 3-qt stock pot was too short for it to mount correctly. A taller pot or an 8–12 qt container works much better.

I have an eight year old Joule. Being tied to the app is a concern for me as well. When I bought my Joule, it was owned by Chef Steps. Now it is owned by Breville. It stopped working with the Breville app for a a few days, but the Chef Steps app worked. Now it tells me that the Chef Steps app will stop working, so fingers crossed that the Breville app stays solid.

I've got (and LOVE) the Nano 3.0, which seems this Mini is about the same, minus the display/controls. This is a perfect gift for friends to introduce them to the world of Sous Vide. If anything, it's worth it JUST for making the best filet mignon steaks, better than restaurants for a fraction of the price.

850w is the relevant number, and that's a decent heater. Could start with hot water if pushing the limit, but I don't think that would be an issue with a home sized cooking vessel and this device.
