I only found the Beef Tenderloin in the inventory, but possibly will add Rib Roast and Frenched Rack of Lamb later since the deal came out today. In previous years I have bought rib roast through Instacart during their Christmas special they have every year.
They sell out daily, so better to place orders in the morning or go and pickup in the morning. They normally refresh stock daily. So if sold out, try in the morning the next day. They can run out completely by the end of the weekly sales period.

I get about 30% waste on trimming up a whole tenderloin, so it's almost never to my benefit to re-cut my own if I'm buying locally and there's not a killer sale. TBF, I trim exceptionally lean, and some of that waste becomes steak sandwiches. For less than $11/lb (with filler and instacart filler to get to 30%) Choice tenderloin is a no-brainer.

Was this your first foray going to an Aldi? It's not a typical supermarket with multiple departments. That's one of the ways they keep costs down.

Rib roasts can be further defined as prime or not, depending on which parts of the ribs the cut comes from, and this grade is different than the prime grade that we distinguish from choice.
You can have prime grade prime rib roast, prime grade rib roast, choice grade prime rib roast, or choice grade rib roast.
This Aldi sale is probably for choice grade rib roast.
