The one Walmart has isn't aluminum-free. The aluminum free equivalent would be the rumsford brand, that is $3.xx at walmart.

I prefer aluminum free, because things that need a lot of baking powder (biscuits, for example) taste better.

So, if sodium aluminum sulfate can just be eliminated, why do most still use it? It must provide some rising benefit.

Thanks! I've been using Trader Joe's baking powder (also aluminum free) for years but I've been priced out of their stores. This is a good deal.

(1) It improves shelf stability. (2) It makes more "forgiving" baking powder, less sensitive to overmixing and letting the batter sit too long before baking. Inexperienced bakers will likely get better result. Possibly also just cheaper, as usual.

Baking powder has a relatively short life.
But, if you make it (each time you need it) with the following ratio, you don't have to worry about that:

Baking powder = 2 parts cream of tartar, and 1 part baking soda,
in other words:
1 Tablespoon baking powder = 2 teaspoons cream of tartar + 1 teaspoon baking soda

I purchase the cream of tartar at my local food co-op, where they sell it in bulk. Not all do, so call first, if you don't usually shop at a food co-op. It's cheaper if you can purchase it in bulk, but it's not too expensive if you purchase it at a discount supermarket.

I believe if you premix the above recipe, you end up with the same short shelf-life problem (for best leavening). But if you mix the cream of tartar and soda together for each use, that isn't a factor.
