Among the three models with N97, N100 and N150, N97 is the most powerful of the bunch as all of them have exact same CPU and iGPU configuration but N97 has a 12W TDP whereas N100 and N150 has 6W TDP. N150 is built on newer 7nm Node and has higher efficiency but for a mini PC and such a lower powered chip, the advantage is barely noticeable.
Performance Wise: N97>N150>N100
All the models of WI6 has a 36W Barrel Pin Power Adapter but support power via the Type-C port as well. So, Single Cable operation is possible with Monitors and displays, supporting USB-C DP Alt mode and power Delivery out.
The WI9 model only comes with N150 and the main advantage it has that it has two M.2 slots for storage, one 2280 and one 2242, supporting both PCIe 3.0 and SATA M.2 SSDs. However, the speed is PCIe X1 per Slot due to the only 9 PCIe lanes available from the SOC. However, for NAS and other usecases, that speed is still fine.

Any of these with a pcie slot to add a lan card or has 2.5gb or 10gb networking to use as a router?

I've never seen one of these mini PCs with a PCIe slot. Some of them have multiple m.2 slots, and there are network adapters that can plug into an m.2 slot, but it'll be much easier to use a USB 3 to ethernet adapter. They're available in speeds up to 10gbs.

Due to Ram price hike, which is nowmore than double from what it was 2 months back.
Regarding these particular Mini PC, there are actually cheaper N series Mini PC, around $150 range even I was curius why these are a bit expensie compared to those but if you see the configuration, you will get why:
This model multiple Gen 2 10 Gbps USB-A ports whereas most budget one has 5 Gbps
These model has a full function 10 Gbps Gen 2 USB-C port, with Display Out, Power Delivery and Data whereas some of those cheaper option completely lack one. if you have a display capable of USB-C Input and PD out, you can literally use single USB-C cable to connect to display and get power.

Yeah unfortunately I don't trust a USB network card to run my network but looking to find something lower power usage to do so

I just reread your original response. Some of these do have dual 2.5gb NICs, but not the cheap ones. You're probably talking about spending in the $400-$500 range.
ETA: I overestimated a bit. Here's one for $330.
