Huy Fong isn't what it used to be. They screwed over their longtime supplier, Underwood Farms, and now they get their Jalapenos from random sources that can't keep a consistent red, so most bottles in store are this sad shade of brown now. What's worse is the flavor is not the same. It is no longer as rich as it once was, and is not as spicy (which is the whole point, imo).
Underwood Farms came out with their own Sriracha sauce, and it tastes like what Huy Fong USED to taste like, it is rich, spicy, and deep red in color. You can get it off Amazon or Costco, prob in a bunch of grocery stores now, has a dragon on the emblem.
This brand is garlic-forward and tastes more like ketchup. Huy Fong is more like actual chili paste, is thicker, and much spicier. My wife is Thai, and her whole family uses Huy Fong. This was suggested as an alternative during the shortage, but we didn't like it.

This may have been a deal a few years ago when the Huy Fong brand was hard to find, and overpriced because of issues with manufacturing and delivery (along with lawsuits due to neighbors saying the company was causing the area to smell)... but lately prices are back down and usually cheaper in the asian markets for the name-brand.

I read several taste reviews that stated the underwood farms tastes nowhere near before or after huy fong with little to no heat and the price is excessive. While the huy fong is milder than it used to be the taste is still considerably better and that part I can vouch for on my own as I have both an old bottle and a new.

This is my experience as well. The Gold Dragon/Underwood farms sriracha just tastes like straight peppers. It has the heat, but no other flavor.
Huy fong before was noticeably hotter and had better pepper flavor. The "new Huy Fong" is still good and still champion.
I tried about 10 other varieties during the fallout, none of the other brands satisfied my need.

They also have a Carolina Gold BBQ sauce that is amazing. I live near two of their farms and get produce from there all the time. It's far better than what the grocery stores have.

Habanero is hot, but tastes like garbage. Taste is what matters. I don't get why people worry about hotness with stuff like Sriracha and Tapatio--those are about taste, and the brand name Huy Fong consistently tastes best.
If you want heat, you can always add some dabs of Dave's Insanity or Da Bomb.
Current Huy Fong is still the best option. The taste is still there, just not all the heat. The color doesn't matter much to me.
I prefer Underwood now. Literally tastes like what Huy Fong USED to taste like to me. Huy Fong is now like a bad imitation of its former self. Like anything, this is just my opinion.
