I have been ISO a standalone dryer. I have a P2S w/ AMS 2 Pro. I would like the ability to dry out 4 spools while also printing. Wondering if its better to 'future proof' if I ever decide to print more than 4 colors at a time, and just get a second AMS 2 or just get something like this and maybe never use the drying on the AMS anymore.

You can look in to the Sunlu AMS Heater as an option which you have full control of independent of the printer or AMS. It was designed for the 1st gen AMS, but someone made a mod where you can use it on the AMS2 Pro: https://makerworld.com/en/models/...Id-2101253

I have it on a couple of my 1st gen AMS Units.

If I needed another dryer I'd probably pick up the one in this OP. I already have the Space PI X4, Polydryer, Sunlu S2 & a couple of the Sunlu AMS heaters. I had the S4 as well but when I got the Creality it made it redundant so I gave it to my nephew. Specwise, this SH03 seems to be able to do what the X4 can, namely heat up to 85 degrees and have independent heating in two chambers.

Does this dryer allow the Bambu P2S to auto select the color from the spools when printing or you need their AMS to do it?

This is just a dryer. For multicolour, you will need Bambu's AMS

Mine is on order. I look forward to an 85 degree blast furnace for my ASA. 65 is probably not adequate.

As a 3D printing novice, who mostly feels like I've had some strong dumb-luck with my prints - Are these used for long term storage, or used periodically to ensure spools are dried prior to using them?

This and most dryers are designed to dry filaments. For storage, there are much cheaper options. Depending on the filament, it is used more than periodically. For pla, you generally don't need it, but I still occasionally even dry pla as it can enhance your prints even if they looked good prior.

I've found that I get just fine results with gallon ziplock bags and one or two dessicant packets in the bag. I'm sure filament dryers are great for speciality filaments, but I've printed thousands of things in PLA and PETG without issue.

Based on this guy's video the are the same as far as features. The main differences to me are the screen, the lid shape and how it opens, and where the filament can exit the drier. I preferred the Creality and found it on Aliexpress for $130 (there's one for sale there now for $122) which made it cheaper. I've been very happy with it. If this deal were out at the time I probably would've gone with the Sovol.

I do the same. Walmart brand gallon size freezer bags fit most standard spools perfectly. Occasionally I'll use my DIY filament dryer for spools that have been sitting for longer.
