Could you just get off in london and not use the connecting flight to Ireland? And just use the return flight from London. It's $200 cheaper than just taking the 1st flight

No, that's called skiplagging or hidden-city ticketing and airlines do not allow that. You run the high risk of them canceling your entire return leg (back to Austin) since you didn't take the full outbound journey and then you'd be stuck in London.

Also, even if they didn't cancel your return, you couldn't just check-in for your flights mid-route and get on in London. Your return ticket starts in Ireland so you'd have to get on the plane there.
