Be sure to season and oil it first. It "feels" like it is seasoned but it it is just some factory coating that will wash off right away.

How important is it to have a liner with these. Some companies sell them for bread and make a big deal about the liners, which often cost as much as the pots.

i use a silicone liner for all my sourdough in my cast iron cookers.

I use a regular Dutch oven I got from Aldi for less than $20 for bread baking. I use parchment paper as a liner (don't bake at higher temps than 450 F). The rectangular loaves I bake in a regular 9x5" pan. This one looks a bit like a "unitasker". Regular round Dutch oven is more versatile.

It's a great way to make high hydration breads, but just fyi you don't want to just use it like a typical bread pan. Different technique.

Man. I want to try this, especially since it's good up to 500°, but I feel like if I'm getting another Dutch oven to replace our round one (a Le Cruset wannabe) that I should be going with a seasoned one rather than enameled.
