7 knives is more than you need. Chef knife, utility, and paring. Maybe bread. Kitchen shears are nice. Anything else is unnecessary.

These are coated knives of some kind, not really sure they're meant to be kept sharp but I could be wrong.

Agree with you in the basic sense as a home cook we have the following, good steel knives.

11" Filet knife for deer/fish/etc.
8" Chefs Knife
7" Santoku
4" Paring Knife
Bread Knife

I'd say the most important thing is one you can maintain and keep sharp yourself. We really like Japanese style knives and have a good sharpener to keep them like new. All knives get dull, some faster and some slower. Harder knives stay sharp longer but chip faster.

What others said about keeping the essential cutlery knives, and keeping them sharp. These are "guest knives", if you entertain a cooking party or have a guest over, these are the ones they get to use.
