You can find attachments that give the appearance of a light gun - but additional hardware/sensor would be needed to make the joy con function as one and make it behave more like an arcade machine...

You can, but it's just an overall horrible experience. I grabbed HotD when switch released it a few years back and got a gun for the joy con and it was one of the most frustrating experiences. Haven't played since.

On the Wii this made perfect sense but why would you buy this for the switch ?

Yes, but I don't recommend it. As someone who's played a significant amount of HOTD1 Remastered, you'll be regularly "resetting" the gyro every other minute due to becoming off center. This isn't the fault of the game, it's because the Switch doesn't use motion tracking ir like the Wii or PS3 Move, meaning the "center" of the gyro will regularly shift and it's harder to reset on most light gun "accessories" unless you're using both hands or the accessory allows for direct contact with the buttons using one hand. TLDR; just use the joycons by themselves or with a grip, as most light gun attachments actively make things less enjoyable.
