You have to tell her, once she adjust the LCD display it will affect the front camera angle, she must then put on the front camera view and see where the camera is pointing. Sounds like this technology is too much for her, she was better off with a basic dashcam.

I think it comes without saying, she should have checked the camera angle after adjusting. If that is not something you are willing to do and fully expect it to capture everything, maybe you need to find something that has an ultrawide angle or just a dedicated dashcam

Any recommendations for one this cheap that doesn't record, just for viewing when backing up or parking and with minimal wiring?

Skip all mirror dashcams. Such a flawed design/use case. If driver adjusts the rearview mirror to get a better viewing angle of the rear, driver could potentially point the front camera attached to the rearview mirror away from where it should be pointed. How do I know? It happened to my niece. She got into an accident and when we checked the front camera, it was angled up to the roof of the car. No usable footage recorded of the collision whatsoever...we got a nice footage of the ceiling/roof of the car though.

The front camera also can be adjusted, it has an axis for fine tuning

So the standard procedure is to get in your car check your mirrors, then check the dash cam, then go.
Just get a glass mounted cam

It should be set and forget. Unless you share a vehicle, in which case this probably isn't for you.

I normally go for IMX678 Starvis 2 Sensor 4k for front camera and Rear cam and Cabin at least 2k with IMX675 Starvis 2 Sensor. But of course they are pricier

Would be great to find a good solution for mounting this below the existing mirror. Maybe mount it low on the windshield. I don't like the devices with the tiny screen because it is difficult to use them as rear view cameras.
