How is this for using as a hub behind my two tvs to connect consoles and shields? It would be fed by a 100' cat6 cable I ran years back that's currently connected to a single device, all others are using wifi.

you don't need PoE for any of that...
a regular Gb switch is <15$ and will do the job.
