599 are warmer and a little more fun to listen to, mainly because they have a bit more bass. Female vocals are a tiny bit more "veiled" than the 560S.
560S are some of the most ridiculously precise and accurate headphones in this price range. Great for games, content production, etc. But for music enjoyment 599 are a little more relaxed, fun, and warm.
Ultimately the differences are minor, so if you have one, I wouldn't be jumping urgently to get the other. If you have neither, you'll get amazing mileage out of the 560S and they'd be my recommendation. In my opinion, the next meaningful upgrade in Sennheiser's line if you want a similar sound is 660S2, so these are an incredible value.
Disclaimer: All of this is my opinion as a big headphone enjoyer and someone who has listened to many while working at an audio store.

The closer headphone i have tried for gaming almost equal to hd560s are the BD 900 x pro. (which i also own) but soon will be selling.
Btw it was $149 just a few weeks ago

Keep in mind that I have not fully broken in my 6XX just yet, so my opinion might be slightly off. I've tried both with my best headphone DAC/amp (that balanced Monolith with the THX and 2x AKM DAC chips)
to my ears the 560S are VERY good, especially for under $300. Wide soundstage, good detailed and punchy bass, very clear highs and mids-but I'm probably old and I seem to gravitate towards brighter sounding and detailed headphones. However, to me they sound like… almost perfect. Others may find their brightness fatiguing.
the HD6XX sound good so far-warm and detailed. But the soundstage isn't as wide and while the bass is punchy and detailed, it doesn't have QUITE the same punch as the 560S. They appeal less to me because they don't sound as bright, but maybe a bit more natural than the 560S. People may find the HD6XX more appealing and less fatiguing. Everyone complains about the clamp force for some reason but it doesn't bother me much.
I'm going to keep breaking them in and will provide further review of the 6XX.

Got 3 , 1 online and 2 locally. They were brand new. Not sure why bestbuy is getting rid of them
