I eat this (as cereal) pretty often. Tbh I don't think these would elevate your ice cream beyond just adding some crunch and protein. Probably more of a neutral addition. If you give it a shot, I'd love to know how it works out!

Throw protein in and up the sugar to compensate and make folks think it's healthy....
