I tried many different versions of usb-c to 3.5mm adapters for MacBook Pro. This was by far one of the best in terms of high output and very low noise. I kept these and returned the others.

If you want to use a 3.5mm adapter for music with HiFi earbuds, you should get ones that have higher SNR, like those with a ALC5686 or CX31993 DAC (~$5-10). Cheaper adapters like these will have a noticeable hiss with low impedance IEMs.

I got some red ones and they don't even work unless the volume is turned way up.
(actually this is true, but I expect it's more to do with the crappy brand)

What I'd give for a more complete list of compatible phones. Guessing my Samsung A53 5G model isn't compatible. Seems to be only Samsung S series phones that support this kind of device.
