I used to use a little bit of this cheese in my cheese sauces because the sodium citrate in it would emulsify the real cheese in the sauce really well. Now I just have an entire giant bag of sodium citrate that I'll never finish in my lifetime because you only use 2-3% of the total weight of the cheese in your sauce. If you use this cheese as an emulsifier getting the bag of sodium citrate is cheaper in the long run.
