I'm tempted to get these, but my old Netgear R6700 V2 with OpenWRT is still working fine. Not sure if this will give me a huge speed boost once I switch to 1 Gig fiber. I currently have 300 Mbps dl / 30 Mbps up and the Netgear is fine. However, coverage in one corner of the house is mediocre. I'm curious if having 2 routers with WiFi 6, which is known to have better speeds, but worse coverage will actually be better for that specific problem.

It'll definitely help that corner, if you can place the routers in good locations.
And since you are already running openwrt then you probably already know how toanually mesh them.

I have two of the Belkin version (same hardware) running openwrt, one as router and one as a wired back haul access point on the other side of the house. It was a little involved to get them flashed and they had an issue known as the "kiss of death" that required you to recover them with uart on an earlier firmware version but now things seem good. Handoffs between APs are instantaneous (I configured 802.11(k/v/r?).
For the price, this can't be beat (I think I got two refurbished on eBay for $49 each), and if I was going to spend more (3x as much for one router) I would look at the Gl.inet Flint 2.
Once you use these though, you wonder why people are spending $200-300 for Asus and other routers.

i need a second router no wifi to offset a weird issue i have with eero -- device from work will not get an ipv4 address when connected wired to eero.

i put a mini gli router ahead of switch, and it gets ip v4 and everything works... unsure what the issue is yet, but maybe $40 experiment with OpenWRT would make for a decent exit due to more functionality than eero gives u without subscription
