If I remember correctly, this is actually due to the source code having been lost and thus resorting to the PS2 source code instead. Game preservation really is a joke to these companies.

That's the claim, but it's probably likely that, as Nintendo tends to do, programming on the Gamecube was a lot different (it's still stupid difficult to emulate N64 correctly, a 30 year old system). So it's easier to simply upscale the PS2 version and call it a day. Vast majority of ports these days are lazy upscalings that take probably 4 people to produce. Retroarch can pretty much do it automatically and it's open source - wouldn't surprise me if the companies all stole the source code from the litany of cores.
