The big things to look for are 1-piece formed kettle construction (some have 2-piece where there's a separate bottom plate with a gasket - this hamilton beach one has the bad 2-piece construction https://a.co/d/04mHEOZ9) and stainless lid with no plastic hinge mechanisms that also touch the water.
Temperature control is mostly nice if you're a tea drinker or for re-constituting honey without destroying it.
