I never pay attention to the expiration dates except to use up my oldest coffee first. I regularly have used coffee a year or more past exp. and it was fine. I try to keep my coffee stored as cool or cold as possible because it does stay fresher longer that way.

I'll have to try your more coffee then dilute brewing method to see if that helps with bitterness.
