Also lets off a fair amount of heat - I was expecting this to be more for ambiance than actual warming power but it does both well!

Stainless steel is also just plain cheaper for them to use, because it is one of the most produced sheet metals, and economies of scale drive prices down.
Do note that "stainless steel" is just a term for steel alloys containing above a certain percentage of chromium, which results in them being more rust-resistant - not necessarily rust-proof. There are various types of stainless, and the higher the chromium content is, the higher its corrosion resistance, but chromium also makes it more brittle.
Seeing as this is coated/painted steel to begin with, it should be fine, but, unless it's made of marine-grade steel (the kind used for ship hulls and such, intended to survive long-term submersion in salt water), any directly exposed steel surface is vulnerable to rusting eventually - even marine steels aren't fully immune, they are simply designed so that if they do rust, they form a relatively impermeable, protective layer of iron oxide, preventing the corrosion from penetrating deeper into the metal.
So, just be sure to cover any potential cracks in the paint, and you should be fine. The only way to be 100% sure to avoid rust is to go with aluminum, though, which isn't exactly great for fire pits, since it is very thermally conductive.
