I've been running this plate on a P1S for about 6 months. Very happy with the results. Less brims, less mouse ears, less fallen purge towers. Don't clean it with IPA like a PEI sheet.

Should I clean it with a Stout, or perhaps just a lite pilsner?

Glacier is fine with rubbing alcohol. Frostbite is the one they don't recommend it.
