Z6III isn't going to be much better in low light - remember that on the Z6III you'll likely have to crop, and then you'll lose the noise benefit of the larger sensor. Same story with lenses - a faster lens that is shorter focal length - if you start cropping you lose the noise benefit of the faster lens.
I think the Z6III is a good match to the 180-600, whereas the Z50II is better suited to a 400mm lens - 600mm is really long on a crop camera, and 270mm equivalent on the short end means you'll miss shots of subjects close to you, or bigger subjects, or if you want a wider angle to show the animal's environment.
So Z6III + 180-600 or Z50II + Nikon 100-400 or Tamron 50-400 would be ideal, imo.
If there's any chance you'll be able to afford an upgrade to a Z8 in the future, I'd get the Z50II now - I think the jump from Z50II to Z6III is smaller than the jump from Z6III to Z8 - the latter's 45 MP and 120Hz, lag/blackout-free viewfinder is really awesome for wildlife/birds.

Also the 40mm f/2 Z was $143 refurb. I know you said well rounded, but man that price was a steal for a spiritual nifty fifty. Probably why it sold out. I have one, and I use it all the time when I don't want to lug around my heavy primes or zooms.
A bit higher end
Nikon 24-70 f/2.8 S is available refurb, I got one during the last sale and it's excellent
And speaking of primes, they do have their 50mm f/1.8 refurb avaiable which is very good. Don't let that 1.8 fool you, it's better than their 1.4, and while not as good in absolute terms as their 1.2, it's still great.

Depends on what you do, but IMO if you're starting out, the 50mm f1.8 will always have a place in your bag, and I think NOT having the zoom flexibility starting out can help you develop your creativity, and will also provide guidance on where you want to go next.
