I don't know much about if the build changed from the 5320, but you can get a 13" refurb i7 1185g7 on eBay with 1 yr Allstate warranty for 300 rn with 32gb ram for 300. https://ebay.us/m/AOIoL9. I'm seriously thinking of the eBay one as it's processor is basically the same for less money and double the ram.

Does Dell have any laptops that don't get insanely hot? My laptop is getting old but it's super hot - always has been.

Overkill. So yes. It will do all that great. Plus, only about 3lbs and less than an inch thick.

I would say that for your use case this would be overkill. I would recommend that you get an arm based processor that can give you much better battery life and can more than handle your needs. If you want to spend a little more the MacBook Neo would be a great option.
