Unless someone's hosting something serious from their home internet, running 30 video streams, or uploading/downloading terabytes every week, I don't understand why anyone needs over 1Gb. It always cracks me up when someone brags about having multi-gig internet, but has a router that only handles gigabit at the internet port. If there's a bottleneck, it's usually equipment, not media.
I've found the price difference in CAT6/6A vs CAT7 really drives customers to just go with CAT6A rather than go up to CAT7, unless their use case dictates it. Most businesses with significant distances between wiring closets go with fiber to provide copper separation between data closets. I've seen plenty of lightning strikes that wreck environments, but they're saved from multiple closets getting zapped because they have fiber uplinks. That's why it's industry standard. There are arguments for things like HDMI over Ethernet, but the improvements CAT7 has over CAT6A is tiny, particularly for residential installations. I'm more of a believer in wireless connectivity in residential environments, with a good mesh solution being enough, but everyone's (presumed) needs are different.
