When you say 'you lost the discount' did you allow the order to go just take place and bill out?
I can assure you today, I participated in this deal my self with an ALDI pick up order. Things were OOS with no subs allowed after the order was placed. I added nothing more to my order, items OOS were about $15, I paid $35ish charged to my CC versus $50. I was sent the final receipt showing all the math.
That could be it, I only do pick up orders with Instacart, and that is of course my examples in all my posts in this thread as the title is "PICK UP ORDERS"

No, but that's the most common situation. if you've allowed a substitution, generally it's not going to change your total much, may even make it higher if the subbed item is more expensive.

As mentioned, this thread is about and titled GROCERY PICK UP orders, and I can only confirm the oos scenarios being discussed apply to PICK UP ORDERS only. Not any delivery scenario.

If the out of stock situation occurs AFTER you've placed and confirmed your order, while the shopper is gathering your products, something is OOS, it will be line itemed out. You may receive a text asking you to confirm the refund on that item. With my order today at ALDI I did NOT lose my $50 discount even though 2 or 3 things were OOS.
