The issue is that the National Electrical Code (NEC) requires that a continuous load should not exceed 80% of the rating of electrical equipment. This means that a NEMA 14-50 receptacle with a 50A breaker and 8GA THHN is fine for a 50A intermittent load like a welder but is only is good for a continuous load of 40A. The NEC defines a continuous load as any electrical draw expected to run continuously for 3 hours or longer. Examples include EV chargers, pool pumps, and electric space heaters.

As for the EV rating, I know the receptacle can be EV rated, I wasn't aware that the plug can be EV-rated as well, huh

Your main issue after that is going to be dealing with double GFCI, since NEC now (as of a few years ago) requires the protection on the breaker end...and all EVSEs have their own protection already built into themselves. You'll get a lot of trips as they fight each other...but if you hardwire, this is a non issue (NEC drops the GFCI breaker requirement here) hence why hardwire is more popular now for new installs.
That said, EVSEs are an easy product to design. 50 amps or 20 amps, all they really do is let AC power run through and do some basic communication with the car. The "smart" versions just add failure points, but hopefully it can disable the "smart" features. All the AC to DC conversion happens in the actual charger inside the vehicle, unless you are talking DC fast charging, which is usually 3-phase and not worth doing at home or in most locations or for more people. If you have busy EV taxi and limo company, totally worth it.
