True - the 12/256 version is $599, still not too bad, and the trade-in values seem decent.
I feel you. I'm still kind of spoiled from taking advantage of the Boost mobile deal from last Sept where I was able to snag myself a moto edge+ (2023) [8GB/512GB] for $120 which was easily network unlocked. I bought myself 2x of them: one as my daily driver and the 2nd (at $90) as a backup.
Why? Nobody really needs more storage than that anymore because everyone streams music and whatnot. I used to insist on more because I kept a lot of stuff on my phone, but I've given up maintaining that, like most people, and moved to streaming music and cloud backups.
Are you running your apps from the cloud too? Lol.

Except app devs are getting shittier and with AI, the bloat is even more extensive. Shitification of apps means more memory required.

For people like me (and my wife, our neighbors, our friends, their kids, etc) who aren't terminally and perpetually online, 128GB is plenty. Don't confuse your own experience within your own bubble with it being a universal experience.
That said I don't know enough about the phone and it's OS to comment on anything more than it's stated specs. I'm kinda spoiled by pixel's vanilla android, so there's also that.
