Switch 2 Editions should work on Switch 1, but without the NS2 enhancements (worse graphics/framerate). Even if you buy one game, up to 8 people can have separate save files on the same console, as long as they have their own profile. I am not sure how many save files one can have on a single profile, since I haven't played the game.

Not being a Pokémon fan, the first (and up until Z-A only) game in the series I rolled the credits on was Arceus and that was mainly for my kids. I got 85+ hours into Z-A and had to force myself to put it down. I found myself actually trying to complete the pokedex and contemplating 100%'ing the game. First Pokémon game I thoroughly enjoyed, but again I'm not a fan of the series so take it for what it's worth. The new battle system made a big difference for me, and while I was initially worried by the small city setting it really worked well with the story and as the game evolved.
The game is best played on Switch 2 as it can look a little rough on Switch 1. Even on Switch 2 don't expect lush environments, I mean it's Pokémon after all. Nothing about the frachise should set such expectations.
