-9% SLOWER in gaming (1440p, who is buying high end CPU to play at 1080p or lower? IF you have an RTX 5090) andthe gaming gap shrinks smaller and smaller with weaker GPUs. So like a 5070 build the CPUs will perform the same at 1440p or 4k in most games.
ALSO The 270k builds comes with faster RAM 6000->6400 and a better motherboard chipset B850 (midrange) vs Z890 (premium)

$2,499 - $680 =$1,819.00. A 5080 currently goes for $1300. So $1819 - $1300 =$519.00.
The rest of the stuff adds up to about $519. Case, PSU, AIO water cooler, 2TB SSD, Win 11.

I like scouting/purchasing components and assembling PCs as much as anybody, but I take the OP's point that MC's prebuilts save you the build time and that it's a pretty safe bet that at best I'll break even getting the components myself, and the self-built means that I'm dealing with separate manufacturers for any warranty claims if anything is defective.
