How does this work and what can you do with the composted waste?

I don't have experience with this particular one, but if it's anything like the Lomi, it basically grinds and dries out what you put in it on the default mode.
Lomi has a lower heat mode where you put in an additive which is supposed to still be active enough to use in your garden.
I normally don't worry about that and put it in my compost bin when using the default setting.
If you don't have a compost bin, you could potentially use it to mimimize odors from rotting food since you've broke it down already.

This unit is the same as the Nagualep in this video

This doesn't compost and if you have space you really don't need it

If you have a small garden or are in an apt and want to take up less space to compost sure

Honestly a solar oven would basically do much of the same, dry out the scraps, and not use any power

You could make a basic one out of a cardboard box and foil

Probably okay, but you really can just dump food waste into a pile with leaves, grass, wood chips and other organic waste and it will break down fine on its own. This is probably best for people who have a very small yard, or live in an apartment and don't have access to a community compost collection program.
