It's very difficult to find the full specs on these but if you take the time you'll find that these are only rated at 10 amp discharge. That means that for a typical UPS using both batteries you're only getting 240 watts maximum output.
Here's one of the few listings I saw where discharge current was listed at all.

LiFePo4 batteries are one of the safer lithium chemistries. Search for Will Prowse on YouTube and there's a recent video where he used a spark generator to try and ignite a damaged battery that was venting flammable gasses in an enclosure that kept the gases contained. It seemed to take a lot of work, and a reasonably built battery operated under normal conditions (charging/discharge rates) and stored in a cool/dry place seems to have a favorable risk profile for most.

Thinking about this for solar+led night lights for a kids play structure? Overkill or about right?

If I had to put solar+led night lights on a kids play structure, I'd get one of those battery packs with a solar panel built in and run the LED's directly off that.

If putting these in my house, I wonder if I should get a lithium fire extinguisher. Supposedly lithium batteries cannot be extinguihsed by regular fire extinguishers.

What UPS do these actually go in? Most of them come with Lead Acid, which I assume uses different charging methods.

This can be an awesome setup for a shed or any other off grid small scale setup. I'd pair these with a 80w-100w solar panel and a cheap charge controller. These lifepo4 are fantastic for a setup like that. Kids use stuff until it's dead-dead and that murders SLA batteries. These are built to go all the way dead (built-in cutoff) and they have great capacity and runtime.
I have a similar setup in my shed to power overhead motion controlled work lights and charge the kids power wheel batteries!

I was thinking this would be an interesting option for 48v golf cart batteries but then saw post about 10amp max output and that kind of kills it

Unless you need this specific size or have extreme cost constraints, you can get a much, much more capable battery for just a bit more money. This is 2x the cost but has 5x the capacity, Bluetooth and 5x the output of both batteries here put together.
