The Micro Center "Prime Day" profit maximizer prebuilt. $350 bundle (normally $300), $650 GPU, $250 for the PSU, case, CPU cooler, and SSD. Find someone to build it for you, when the bundle goes back down. I do this spec, with build fee, locally, for $1300. Much, much better than a GabeCube also.

I bought the 16GB version of this for $1299, with the $100 discount for being a "member" (all it means is you've registered an account on their site). It's only been a few weeks but this has been a great Bazzite machine.
The 9070 XT isn't as powerful as the 5080 in my main rig in my home office, but with WFH I've really developed a distaste for gaming or relaxing in the same place where I work — and been it's more than powerful enough for a very good 4K living room "console" experience (to the point that I'm considering selling the 5080 and downgrading the office setup).

The RTX 5080 will remain hot for a while, so you have plenty of time to compare, without losing value. Worth messing around with local game streaming too. I never do modern gaming from the main PC, using Steam Link, Sunshine/Moonlight, Apollo/Artemis to every smart tv and tablet. Even the retro PCs are all VGA or adapter out to a large screen, other than the DOS setups.

I'm looking to put together a build with an RTX 5070 Ti, but I don't know much about the best brands for the price. Does anyone have any advice on whether I should look for a prebuilt or just buy the parts and build it myself? Thanks, everyone!

the tricky part is the 32GB ram. no way of getting this bundle. $1500 is a decent deal

I completely missed the 32GB, honestly. With the 270K Plus bundle only $200 more at $550, I can do those for $1500 with build fee, same specs otherwise, and a much better deal, minus the EOL socket / no upgradeability part. The 7500X3D is fine, but doesn't compare to the 270K Plus, for the same $1500 they want for this.

I personally think the only cards people should be considering right now at that higher end pricing is the 9070xt and 5080. The 5070ti trades blows with the 9070xt but the 9070xt is significantly cheaper. Fsr4.1 is really good on the 9070xt. The only downside I can think of is the lack of frame gen support in a few games. But I think it will get better as people switch to amd a lot more now. And I guess u don't get path tracing really, but I don't know how well the 5070ti really even manages that. If u really want a 5070ti though then the deals are hard to find. U could try microcenter I guess

imma take a shot and assume they (like I) managed to snag a 5070 ti for $500-700 (mine was $700) which should make it comparable to the 9070xt (currently $650 on amazon)

If you could get a 5070ti for the same price then it makes sense

The $500 price is long gone at this point lol. That $700 deal looks good. I doubt it's easy to get a 5070ti for $700 but if you do, that's better than a 9070xt

Is this PC strong enough to play GTA 6 in 2K ultra settings?

neither of those were really wide spread deals that you can count on actually getting... the 500-600$ 5070Ti is a bit of a dream at this point.
