I bought the 11 inch pro cellular last fall and wish I got the 13. I also got the nano-texture and I'm still not sure I like it or not.

Can you tell me what people use this large iPad for that justifies this price over a large android tablet?

Personally I buy it because I know I can get basically a decade out of it with regular use and updates for much of that lifetime. Also, I know the resale value will hold so that if I decide to upgrade, I can suffer Facebook Marketplace to get a decent chunk paid for out of my next purchase.

Word. My iPad Pro 3rd Generation from 2018 has been a workhorse for me. Every single update has worked and worked well. The only thing is with the last update to 26.5, she's become slow. Not unusable but noticeably slower. It didn't make the 27 cut, so it's time for me to grab a new M5 and, to your point above, ride it for another 8-10 years!

I use mine for Illustrator, Photoshop, watching movies without squinting on flights, taking notes etc. I also prefer a larger screen. Just my thing.

Nice price for new if you don't have a Micro Center near you. They have it for $1169.99.
FYI and YMMV, Micro Center has open box ones priced at $1052.96, at least at the Madison Heights, MI location. I picked one up last week and there's still one left in stock right now. Since this iPad was released within the past year, AppleCare One is still possible to apply.

Apple is known for pushing updates that slow iPads, iPhones and computers all to sucker you into the next newest and shiniest Apple product.

Yeah but it's an iPad that is 8, going on 9 years old. If you don't expect software to outpace hardware at some point, you're just living in a fantasy land. I got way more than I expected out of my 2018 machine, and it still works the same as it did when I opened the box, albeit a little slower than I am used to.
