For New Balance, the higher the number, the more premium the shoe. 680 is ideal for beginners, 880 is like a daily trainer, and 1080 is a higher end shoe. That's the best way to summarize it.

I'm not a runner just want a really comfortable shoe. Standing around a lot. Walking quite a bit. I'm relatively fit. You seem knowledgeable

Really depends upon what you like. As, at least in NB, the higher the SERIES number (the hundred place or thousand place) the more cushion or impact protection it has. The tenths number typically represents the version number and the single digit typically represents the amount of pronation support.

However, depending on your goals, the higher the series number doesn't always represent the more comfort as you're generally further off the ground which gives a different sensation to everyone. Additionally the more structure you put in your shoe, the less your foot has to do so you lose flexibility and strength in your feet which can lead to problems on its own.
