Once every professional knife sharpening shop bought a digital microscope, the whole "straightening the edge" fable has ceased to be told.
Sharpening Steels or Hones DO sharpen knives, and DO remove metal. You can see it under a microscope.
Sharpening Steels create a micro-bevel, removing metal at the knife's apex.
