People with a natural gait/normal arches very VERY rarely roll/hurt their ankle. They can have impact issues where you get almost an arthritis thing but actually rolling them is either really bad shoes, OR if it happens to you a lot, it's flat/overpronation without the right shoes for them. If you are either of those you need stability shoes like the GT series from ASICS, The Guides from Saucony, Brooks GTS lines (if minor) etc.
I used to roll my ankle all the time before I got into stability shoes for flat feet. Like as a teen that was a semi weekly/monthly thing. Now despite weighing more and putting way more miles on them, it literally never happens anymore.

I mean, my foot is at least an inch or more higher off the ground than a typical shoe, the sole is incredibly soft and flexible, and there isn't any additional foam added to the sides to increase the surface area with the ground to compensate for those previous two factors. We're talking basic mechanics here.

Asics Gel kayano 32s had a 40 mm stack height vs 45 mm on the vomero (.2 inches difference 1.5 vs 1.7 inches), 0 issue and they have no additional foam.
I guarantee you the majority of people who don't overpronate/flat feet do not almost roll their ankle in Vomero Plus. The additional stack height MIGHT cause some instability, but without your gait issues it wouldn't matter to 99% of users.
My main point is you do not have to trade off "all day comfort" levels of foam for ankle risk. This has literally been my business for over a decade, I wasn't trying to "one up" you or anything, just letting you/others know that ankle rolling isn't normal even in high stack heights. Either the shoe model is trash (which despite my dislike of Nike the Vomero PLus is not) or you overpronate/have flat feet.
Try the Asics Gel Kayanos, since you are pretty mild, it's about as plush as the Vomero Plus, but has some stability shoe components that will prevent your overpronation from happening or getting worse in the future and let you be on your feet all day without any pain.
