Good non-sticking surface, but you can use only low or medium heat because if you burn anything, it will ruin the material. For a "professional grade," it is very delicate.

The only thing, and its a pretty big deal, is how long the handle is. Maybe great for a restaurant but in a tight kitchen and stored in a tighter still cabinet... not so great.

If you burn something in this pan it ruins the nonstick coating. But otherwise it works very well.
I've had one about 18 months and it still performs well.

It seems to me this Teflon thing is not really a thing, but folks like to act like they know something.
Do you have links or anything whatsoever, or are you just repeating what you heard from someone else?

Why? I see this repeated often as if it is gospel, but when I google it, it says if it flakes, the flakes are inert and pass through you and are not absorbed by the body.
