18V trimmers tend to have a 10" cutting range while 56V has 15" or 16". 18V trimmers use a thinner .065 inch line, 56V uses .095 (thicker line that was the standard for gas-powered trimmers).
The thicker line, wider range, higher power means that it can carve right through leafy weeds and thick sections of overgrown grass or light brush.
If you have a well-maintained lawn and you're only using the trimmer to cut grass on the edge of your sidewalk then 18V is fine. But some people prefer to have the equivalent ability of a gas-powered trimmer, even if they would rarely need it.
