I get that listings say Thunderbolt, but this is not Thunderbolt at all.

They try to get away with that saying it's "compatible" which is rubbish deceptive marketing.

A real Thunderbolt / USB4 Ethernet adapter would reduce latency/timing slightly by putting Ethernet directly on the PCIe bus. Which may be why they want you to think it's Thunderbolt-enabled.

These little things overheat anyways when you get anywhere close to max speed so they end up being useless

If latency more important than raw throughput, would you go with this 2.5gbps usb-c adapter or stick with integrated 1gbps Realtek NIC?

Integrated in that case, no question. If you don't need 2.5 Gbps, the onboard NIC will have vastly lower timer latency.

Normally we're talking a millisecond or three. But if you have USB traffic congestion... oh boy.

You can active cool them. My office is spewing fans for cooling pads. We do that for 5G phones to improve the signal/speed (it really does work).
