I think you're not supposed to cook anything acidic in these, like tomato sauce. It's acidic and strips the seasoning.

Hey thanks for letting me know about the acidic part, it will be my first cast iron so I still need some education on caring for it.

Just make sure you clean and season the pan after cooking every time, especially if you think something is acidic. There are many tutorials available on how to care for a cast-iron. If you mess up the seasoning, you can always strip it and start over.

Regarding the health benefits of iron, they do make iron fish (or whatever) that you can drop into what you're cooking if you get tired of the pan maintenance.
