I did this once, and trimmed maybe 3 lbs of fat. Beneath that fat was meh steaks. Very little marbling. At least when it's cut and packaged you can see if it's worth buying.
What's normal price? Costco app already showing $14.99 only.
Doordash>Costco is showing $16.68.

Costco's boneless USDA Choice ribeye is a solid midrange steak buy, with the sale price landing below recent in warehouse pricing and below many local grocery store ribeye prices. The cut is praised for thick portions and the ability to inspect individual packages for marbling and fat before buying. The main cautions are that quality varies by package, some cuts run thin or fatty, and Costco's pre cut steaks are blade tenderized, which means they should be cooked to 145 degrees for safety. A practical pick if you want ribeye and are willing to sort through the case.
Shoppers who compare individual steaks before buying, because marbling and fat trim vary enough that package-by-package selection matters.
The $14.99 per pound Costco app price can undercut higher delivery pricing shown for DoorDash, especially when a first-delivery discount is available for members.
Some shoppers report regular Costco in-warehouse pricing around $18.99 per pound, which makes the $14.99 per pound offer feel like a meaningful reduction.
The deal value can be regional, since regular pricing in Denver is reported to be around $15 per pound and Costco Business Center may be cheaper but offers odd sizes.
The marbling and fat trim can vary a lot, so it helps to inspect individual packages before buying. Some shoppers prefer Costco's thickness and quality, while others find local sales at Safeway, Ralphs, Vons, or ShopRite tastier or cheaper depending on the cut.
Sometimes no: some stores and clubs have had bone-in ribeye around $8.99/lb or ribeye at $9.99/lb, and Costco Business Center can be a few dollars cheaper on some cuts. In other places, Costco's $14.99/lb is still below regular local pricing and can be the better buy.
It is a solid sale price for many areas, especially where regular Costco choice ribeye runs around $18.99/lb or local grocery stores are $19-$20/lb. In some regions it is normal pricing, so the value depends on your local market and whether you want Costco's cut quality and thickness.
Yes, Costco pre-cut ribeyes are mechanically blade tenderized, so the label's 145°F guidance matters for food safety. That means a rare or medium-rare center is riskier than with an intact steak, and the steaks may not suit people who prefer very pink centers.
Yes, buying the whole vacuum pack and cutting it at home is a common way to control thickness and use the trim for burgers or tallow. Costco's pre-cut steaks can be around 1.25-1.5 inches thick, while whole-pack processing lets you choose your own steak size.
I buy my streaks from Costco and was very disappointed to learn this. You have to cook blade tenderized steaks to 145 degrees so if you like your steaks medium rare, you should not buy from Costco
I am fairly certain that any blade tenderized steaks they sell are labeled as such.
I use a blade tenderizer at home and it works wonders.
It sounds like this being a "deal" is pretty regional. This is regular price in the Denver area. Personally, I buy at the Costco Business center and cut them myself. Usually they are cheaper by a few dollar a pound, but you do get some odd sized cuts.
They had Argentinian ribeye there a few weeks back and it was like $11.99 a pound. It was extremely lean compared to US Ribeye, but I actually liked it as normally I think ribeye is too fatty.
That seems about right for Texas when we lived there a couple of years ago. I do know beef is much more expensive on the east coast and $12-15 lb is a typical sale price for choice at Food Lion, Walmart and Publix. Fresh Market usually has really great deals on better cuts but you have to watch the sale bills. TBH we rarely chase deals any more on proteins because they are all so expensive any more and look for expiring marked down packages in the store and plan our weekly menu accordingly...
Past standards or current standards after the FDA staffing cuts by DOGE? 😉
Not sure what point you're making but my point is this should be labeled that it is sourced from Argentina, which is not currently happening. If people want to risk consuming beef from a place like that, they should be made aware of it and not tricked into consuming it (thinking is it US beef) because of poor labeling standards.

Argentine beef is grain fed, so it's naturally leaner than our grain finished beef. It's also healthier, if you care.

Meat prices a couple years ago are WAY different than today's, even in Texas
I don't know about Costco's sourcing (I do like Costco), but I'm still sketched out by all the Brazilian beef that the US purchased because China rejected it for using banned antibiotics. Maybe best to just stay away from beef for a long time.
Based on Costco's practices and politics as a company for literally their entire history as a company I would be willing to bet they are not accepting any of that beef and are not involved in any way with it in their supply line.
