I cut up onions/apples and put them inside the turkey along with a cinnamon stick, garlic, chicken stock, etc. I also put some of that stuff around the turkey. I did that basting thing with creole butter injected into the turkey. I put it in the oven at 325 and covered it for the first part. I put the thermometer into the fattest part of the thigh. It said I was supposed to take the turkey out when it got to 180 degrees. It got to 185 and I took it out. Let it sit for a little bit while I cooked the crescent rolls and cornbread. Then went to carve it and the farking thing is mostly raw. Wtf? So I put it back in...an hour later the thermometer says the turkey is at 200 degrees. I keep it in a little longer. When I took it out...went to carve it...got a few thin slices and then...RAW AGAIN!!!
Everything else I cook in the oven comes out perfect. So I don't think it's an oven issue. What confused me was according to the thermometer it should have been done. Past done. Yet I barely got any meat off it it. And I'm not just talking slightly pink. I'm talking raw.

It's funny you said that though because the night before I was looking up Alton Brown stuff about brining a turkey.
Was the turkey completely thawed? Sounds like it was still partly frozen, and while you thought it was cooked it was still thawing. Or your thermometer was junk. Was it a digital or one like this:

1. You need at least 4 days to thaw a 15 # bird in the fridge.
2. Those thermometers are crap. Get a digital one.
My money is on frozen bird, and your thermometer wasn't reading correctly.
