a 20lb turkey cooked in 3 1/2 hrs in that thing
it. is. awesome.
we brined the turkey in a 5lb pickle bucket with lots of salt and garlic pepper (for about 24hrs), injected butter under the skin in a few places, then put the turkey in the roaster oven at 350-375 (can't remember). that sucker was done less than 4hrs later - and it was the BEST turkey we've ever made.
the roaster oven is a PLUS for a few reasons. obviously, cooking your turkey elsewhere frees up your oven for other things. not to mention, you can put that roaster oven out on the porch or in the garage, thus eliminating all the HEAT eminating from the oven. i will never cook a turkey in the oven again.

Of course, we were sold on it after the first time we used it. We hosted Thanksgiving the year we got married, and had BOTH families in our house. They were expecting something good. We went out on a limb - we brined the turkey and used the brand new roaster oven. We had so many compliments on the turkey that we knew we'd never use a normal oven again
