I just came home and DH is COVERED head to toe in a nasty rash that looks like measles. covered. OMG. I called the doctor and they said to stop taking the amoxicillin, apparently that can cause it when you have mono. waiting on a call back.

FD, I'm glad to hear you don't have Cdiff, but I really hate hearing about your husband's reaction to the amoxicillin. You're really due for some seriously good news soon.

5 8-ounce bricks cream cheese
1 8-ounce cup sour cream
4 ounces unsweetened baking chocolate
3 whole eggs
2 egg yolks
1 1/2 cups sugar
1/2 cup flour
1/4 cup amaretto
2 teaspoons vanilla extract
maraschino syrup from the cherries
Crush chocolate wafers into fine crumbs and combine with melted butter to form the crust in the bottom of a large spring form pan.
Melt the chocolate in a bowl with 1/4 cup warm water in a double boiler or microwave. Whip the cream cheese and sugar and flour until fluffy. Add the eggs one at a time, blending well after each. Add the two egg yolks and blend. Add the melted chocolate and blend. Add the sour cream, vanilla, maraschino syrup, and amaretto, and blend well.
Pour the batter into the spring form pan, wrap the pan with foil to seal the bottom, and set it in a larger pan full of water. Then set this pan into a 350 degree oven for one hour. Turn the oven off, open the door slightly, and allow the cheesecake to cool for another hour or more. After cooled, remove it and chill overnight.
Tomorrow night, I'm going to top it with Hershey's dark chocolate syrup, bittersweet chocolate shavings, and hand-dipped chocolate-covered cherries. Then it's going to sit in the fridge over the weekend to let the amaretto bloom throughout the cake. The poor folks at work aren't going to know what hit them next week.
