A friend of mine posted a granola bar recipe on Facebook today. My kids love these but I don't buy them because most brands have a peanut warning. Oh goodness, they are yummy. How did I miss making something this simple, all this time?
Chewy Granola Bars
3 cups oats
1 cup flour
...1 t. baking soda
2 t. vanilla
2/3 cup butter, softened
cup honey
1/3 cup brown sugar
1 cup mini chocolate chips or M&Ms
Optional: raisins, dried fruit, sunflower seeds, chopped nuts
In a large bowl, combine oats, flour, and baking soda. In another bowl, combine vanilla, butter, honey, and brown sugar; add to oat mixture and stir until combined. Stir in the chocolate chips and pour into a lightly greased 9x13 pan. Lightly press mixture into the pan with the back of your spoon. Bake at 325 for 22 minutes or until lightly golden brown. Let cool for 10 minutes then cut into bars. Let bars cool completely in pan before removing or serving.

Man the heat is just killing me.. I went out shopping for a bit this afternoon.. I am not motivated in this weather.. but, I hit one target, not a ST, and it was just boring.. I really sympathize with those who don't have a ST or atleast expanded target so they can take advantage of the new coupons.. Other than the free produce and bread, target isn't as exciting. I ended up getting socks, bic pens, and some 50% stuff from the dollar spot. First time I have had to argue over that c9 coupon.. after much debate I was allowed to use only 1..

Had a horrible time at kroger.. carefully planned a run.. went to check out and as I am about to hand over my coupons, I notice the green light isn't on for the catalina machine, and I am expecting 4 different cats to print.. so, I asked her if she could check because it didn't look like her machine was on. She informed me that the whole system was down. I questioned why the register beside me had the light on and she told me it didn't matter.. I really didn't believe her and had used the self check out 30 mins before and it worked. I explained that I was only buying the products to get the cat back and she just looked at me
SO, after those 2 stops, I was tired or arguing, hot, and decided to go home.. 30 minutes after I got home, I realized that I needed butter to make something for work tomorrow
Ending the day with more than I started.. and lots of cereal, fruit snacks, and granola.. and of course, my crayon fort I am building

Cherry - Oh my.... she is beautiful... to be honest I think she is the cutest little baby girl I've ever seen.. had to say baby girl, since my DD just graced me with a cute little grandson..
Teri - never heard of Blueberry Dumplings before... they sound delicious.. might have to look that recipe up on the internet... along with peach cobbler, have never had that before either.
Here is a recipe for blueberry dumplings, but I'm a cheater at times so instead of making the dumplings from scratch you can use bisquik, or my favorite: crescent rolls. Roll them out, pinch the seams shut and then cut into whatever shape you want. Squares is what i usually do. Then coat them lightly in flour and drop into the blueberry mixture and cook until its nice and thick and bubbly. Top it off with Vanilla ice cream . O.M.G. It's such a good comfort food.
Blueberry Dumpling recipe:
1 cup all-purpose flour
1 tablespoon sugar, plus 1 1/2 cups
1 teaspoon baking powder
Pinch salt
1/2 cup (1 stick) butter, softened
1/4 cup milk
1 quart fresh or frozen blueberries
2 cups water
Stir flour, 1 tablespoon sugar, baking powder, and salt together into a medium bowl. Cut butter into dry ingredients, using a pastry cutter or fork. Add milk to form dough. Set dumplings aside.
In a large saucepan, combine berries, 1 1/2 cups sugar, and water and bring to boil. Drop dumplings into hot boiling berries by the tablespoonful. Cover pot, reduce heat to low, and cook slowly for 20 to 30 minutes. Do not remove the lid before 20 minutes has passed, and do not stir dumplings.
