looks yummy...cold smokers are the best, but six hours doesn't seem like a long time. ribeye and porterhouse share the number two spot on my list of fav cuts, ny bein' #1. hookin' up with anymore chefs? Big Grin

My favorite way to have it is in these stuffed crossants that I make. They all get fresh strawberries & banana and then half get nutella and the other half get cream cheese.

Are there any experienced bakers out there? look around I'm going to tackle a pumpkin cheesecake, and every recipe calls for a springform pan. I don't know what that is, and I'm curious as to why I need one of those instead of a normal pie pan?

idea is to impart flavor but not cook it 1 bit. it also marinated for 48 hrs or so. it was awesome

Springform pans look kind of like a thin, round skillet, with no handle and 4" sides. You build your cheesecake in it, and then there's a latch on the side that unbuckles to release your cheesecake, leaving the bottom of the pan intact. You slide the side upward and voila...cheesecake on a "plate".

They're cheap.

bulb that totally makes sense now, because cheesecakes usually just have crust on the bottom!!

Facepalm if i'd just googled a springform pan i'd probably have figured that one out! thanks! i'm going to try it out on my office before i agree to bring it to Thanksgiving. laugh out loud

hopefully they're easy to use and don't typically ruin your cheesecake (like with the cake sticking to the sides or whatever).

Oh, I forgot to mention that part. In a springform pan, the crust goes on the top, then you flip it, then you remove the latched ring.

Sorry...it's been a while since I've used mine. I think I made a pumpkin cheesecake last Christmas and it's been dormant since then.
